Expect some funk on the nose followed by a citrusy-straw like finish on the palate. This beer clocks in at 4.6% ABV which makes it a perfect summer drinking beer. It is available in 500 mL bottles at the brewery.
Citrus Hibiscus Red Saison was fermented with traditional Saison yeast, then finished with two Paradox house proprietary wild yeast strains. Traditional Saison character complimented with Brett character and lemon-berry flavors from the fruit and floral additions. While secondary fermenting with brett in an oak barrel grapefruit puree and hibiscus flower were added to finish the beer. This beer is currently available for purchase or on site consumption at the brewery only.
We are proud to announce that our brewing team (Devon Hamilton, JD DeWaard, and Tommy Formicola) put another 3 awards in the books at the 20th Annual Great International Beer & Cider Competition held on November 4th 2016 in Providence, Rhode Island. This competition has judged and hosted over 2,000 beers and ciders since its inception in 1997. This year over 3,500 beer lovers and patrons were able to sample over 250 beers and ciders present.
The Forever Wild Series: Spelt Saison is our first 100% brett fermented beer and we’re thrilled and humbled that it just won a bronze medal at the North American Beer Awards! The bottles will be released this week at our brewery, select beverage centers, and bottle shops.

We had a hunch we’d want it to age for a while to really grab on to the bourbon and oak character of the barrels. After waiting patiently and periodically sampling the liquid for over a year, we’re excited to finally share this beer with you. Continue Reading
