Our Imperial India Pale Ale. A showcase for hops, we use over 3 pounds of hops per barrel. This bold, juicy IPA is double dry hopped, to deliver citrus and tropical fruit flavors while still remaining highly drinkable.

Paradox Red Ale features a blend of 3 malts to give a rich deep amber color and supply slightly sweet malty flavors. Just enough American and English hops are used to provide balance and flavor.

The Off Trail Series is where we have some fun and try out new ingredients and recipes.  Off Trail Beers are typically available for a month or two and rotate seasonally based on what we’re excited about brewing.

Limited Release Double IPA brewed with loads of southern hemisphere hops. This is a big, bold IPA with coconut, mango and especially white grape flavors from the hop profile and notes of peach and nectarine courtesy of our house yeast blend.  A puffy mouthfeel is provided by the flaked oats we add.

Paradox Saison Series: Classic Saison is the first of three Saisons to be released this summer. Fruit and spice esters dominate courtesy of our house Saison yeast with a dense white head.   This is a classic interpretation of Saison, very dry and effervescent designed to let the yeast character shine. Brewed with rye and noble German hops.

Lots of wheat, esters from our house yeast blend, tropical fruits, white wine, slight lemon character. Light creamy color, full mouthfeel, lots of hop flavors and aromatics.

Off Trail Rye Helles is a traditional German helles lager with a slight twist. We use a large percentage of malted rye with our house lager yeast. This highly drinkable beer has an earthy spicy character from the rye malt and noble hops with a crisp finish.

For this Coffee Milk Stout we mix un-fermentable lactose sugar with coffee roasted especially for this beer by Adirondack coffee roasters. Look for a smooth thick mouthfeel backed up by a strong aroma and flavor of fresh roasted coffee.

We use a complex malt bill as well as a high mash temperature to make sure this low alcohol beer can still be packed full of hops. We use a blend of 3 of the most fruit forward hops, and a fair share of juicy southern hemisphere hops, to pack this beer full of flavors of ripe melon and tropical fruit.  Our house yeast blend adds notes of nectarine and peach while flaked oats create a fluffy mouthfeel.

Forever Wild Series:
Brett Cherry Tripel

Our Strong Belgian Tripel gets tart cherries and spends some quality time in bourbon barrels where our house brett strains go to work for secondary fermentation.  The Belgian yeast, cherries and brett give this beer a strong stone fruit character with vanilla and oak notes from the barrel.

Barrel Series:
Barrel Aged Belgian Tripel

This strong Belgian Tripel has been aged in bourbon barrels to add spicy-caramel-oak bourbon notes to balance the traditionally fruit-rich Belgian yeast esters. Brewed at 11% ABV and then aged in the barrels, this beer has a warming finish and a character that stays true to its Belgian heritage while offering just a little more to contemplate.

Forever Wild Series:
Spelt Saison

The first release in our Wild Ale series, this Saison is brewed with spelt and 100% brett fermented in oak barrels. Spelt gives the beer a crisp, refreshing slightly bready character while our house brett culture, Machine Gun Funk, provides the fruit forward notes of pineapple and tropical fruits.

Plum Point Belgian Dubbel

We ferment this strong Belgian ale without fruit before adding 300 pounds of plums for a secondary fermentation. This is a big beer with bold fruit aromatics and flavor. Plum Point is bottle conditioned and may be consumed fresh or allowed to mature in the bottle.

Indian Kettle Sour Ale

Indian Kettle Sour is named for the formations on the shores of Lake George known as Indian Kettles.  Long thought to have been used by local Native American tribes for food storage or kettles, they were actually formed by rocks flowing through the glacial melt that carved the Adirondack Mountains.  Indian Kettle Sour is a tart wheat ale, kettle soured with lactobacillus and fermented with our house yeast blend before being aggressively dry hopped.

Dark Bay Stout

Dark Bay Stout is an imperial oatmeal stout brewed with cacao nibs and fresh orange zest in the boil and after fermentation. This is a big beer with the strong flavor and aroma of chocolate, subtle notes of coffee and a refreshing citrus twist. Dark Bay Stout is bottle conditioned and will continue to mature in the bottle.

Barrel Aged Baltic Porter

Black Mountain Baltic Porter is our award winning beer brewed to celebrate Paradox Brewery’s 100th batch. This strong porter was fermented cool for six weeks with a lager yeast before heading to first use bourbon barrels for 9 months. This is a big bold beer with notes of chocolate, coffee and bourbon. Black Mountain Baltic Porter is bottle conditioned and will age gracefully for years to come.
