Our Imperial India Pale Ale. A showcase for hops, we use over 3 pounds of hops per barrel. This bold, juicy IPA is double dry hopped, to deliver citrus and tropical fruit flavors while still remaining highly drinkable.

RYE PALE ALE RED

Paradox Rye Pale Ale features a blend of 5 malts and flaked rye to give a rich deep amber color. Our Rye Pale Ale balances the rustic, spicy character of rye grain with citrus and grapefruit notes from our four varieties of hops.

Monthly Release Double IPA brewed with loads of southern hemisphere hops. This is a big, bold IPA with dank pineapple, tropical fruit and white grape flavors from the hop profile and notes of peach and nectarine courtesy of our house yeast blend.  A puffy mouthfeel is provided by the flaked oats we add.

OFF TRAIL SERIES

The Off Trail Series is a monthly rotational series that allows our brewers to get creative. Off Trail Beers are always different and gives us a chance to use innovative ingredients as well as techniques.

oats and gose

Oats and Gose was soured in the kettle and fermented with saison yeast. After fermentation it received 2 separate doses of hops form Australia and New Zealand. This is a bright beer with upfront tartness followed by melons, limes, and citrus.

imperial witte

High alcohol witbier brewed with fresh orange zest and pink peppercorns. Expect strong orange and tangeringe with a touch of pepper to balance.

Off trail adult

Grisette style collaboration brew with C.H. Evans commonly said to be consumed by workers as they exited the mines. In this low alcohol wheat beer we used new school Slovenian hops to give it a slight fruity/earthyness to complement the wheat.

Off trail hoppy brown

New Off Trail series beer Hoppy Brown Ale features a complex malt bill balanced by hop aromatics including cedar, sage, and lime. Experimental hops blended with NYS hops provide a unique experience.

Barrel Series:
Barrel Aged Belgian Tripel

This strong Belgian Tripel has been aged in bourbon barrels to add spicy-caramel-oak bourbon notes to balance the traditionally fruit-rich Belgian yeast esters. Brewed at 11% ABV and then aged in the barrels, this beer has a warming finish and a character that stays true to its Belgian heritage while offering just a little more to contemplate.

Forever Wild Series:
Spelt Saison

The first release in our Wild Ale series, this Saison is brewed with spelt and 100% brett fermented in oak barrels. Spelt gives the beer a crisp, refreshing slightly bready character while our house brett culture, Machine Gun Funk, provides the fruit forward notes of pineapple and tropical fruits.

Forever Wild Series:
Red Saison

Primary  fermented with a classic strain of saison yeast. We then transferred  to oak barrels for a secondary fermentation with two Paradox house proprietary wild yeast strains. Then we added raspberries. Expect traditional saison character, dry highly carbonated and estery with tart, fruit notes and wild yeast.

Dark Bay Stout

Dark Bay Stout is an imperial oatmeal stout brewed with cacao nibs and fresh orange zest in the boil and after fermentation. This is a big beer with the strong flavor and aroma of chocolate, subtle notes of coffee and a refreshing citrus twist. Dark Bay Stout is bottle conditioned and will continue to mature in the bottle.

Indian Kettle Sour Ale

Indian Kettle Sour is named for the formations on the shores of Lake George known as Indian Kettles.  Long thought to have been used by local Native American tribes for food storage or kettles, they were actually formed by rocks flowing through the glacial melt that carved the Adirondack Mountains.  Indian Kettle Sour is a tart wheat ale, kettle soured with lactobacillus and fermented with our house yeast blend before being aggressively dry hopped.

Brett Pale Ale with Apricots

100% Oak fermented with our house Brett blend “Machine Gun Funk” Loads of apricots introduced at the end of fermentation for a watering apricot flavor.
